No Excuses

We have moved to another State Jerry has a new job. Praise God
So for a couple weeks we are staying in a Micro Apt. Which means only a micro wave
and top burner. (until we find a home and neighborhood we like)

I refuse let that be excuse to eat junk food. Right now its alot of fruit,nuts, veggies with healthy dressing, water, tuna, grilled chicken for Patience.
And most of the times she will ask for a salad with no chicken or a veggie plate.

I just wanted to take the time to encourage anyone who come across the blog by accident to think about what you allow your kids to eat. I know times are tough and its quicker and easier to open up a can of spaghetti O's. And cheaper. I'm not judging.

What I have learned is food can be simple and just as less eating healthy. Bag of Apples 3.25, carrots sticks 1.25, compared to cookies and chips for lunch.
Those foods have no nutritional value. And it may not effect their weight just yet...
But it could in the future.  On our first night here we did go to Ryann's Buffet. And you wanna know what Patience asked for? SALAD. It was a smorgasbord of fattening foods(comfort foods) on the bar. And my sweet girl wanted a huge salad!!!

I hope you tonight you make a point of fixing a healthy meal for your child. Even if it is simple... that's fine also. Nothing wrong with a simple healthy meal. I know in the past when we ate alot of carbs, before we knew better I was making four or five things and Patience was still hungry a hour later. 

I just wanted to journal this time, moving to a new city doesn't give a excuse to neglect our health. We can do this!!! Even without a oven.  :) And it gives me the opportunity to experiment with more raw food recipes and vegan recipes.

Im sorry if i havent posted pictures lately. I hope to get a new camera cord this week.
Let's face it mine is lost.

After eating healthy

After eating healthy for awhile now food is just that. Especially treat food

Just got finished cleaning the kitchen for the evening and looked over on the table

and seen a Tupperware container full of cupcakes. Patience birthday is in a couple

Days so just for fun the girls and I made cupcakes.

Now that Patience is accustomed to eating so healthy she says sometimes

I cannot eat all of this momma. When we go to the market she never asks for junk

food. And always asks for the best products.

The cupcake container made me realize We got this.

Mock Fecttuccine Alferdo (Raw food)

No guilt, No guilt!!! You could really eat as much as you wanted.

Aboutt 4 zucchini's peel all of them
Half head of Cauliflower
Half Lemon
Basil
Thyme
Oren go
Quarter cup of pine nuts
1 garlic glove
Cherry tomato

1. Spiral half the zucchini's in the food processor (make into noodles)
2. In blender put pine nuts, all the herbs, garlic, and cube zucchini in little pieces
and blend
3. This makes a wonderful Creamy sauce
4. Put cauliflower in food processor grate, it makes a Parmesan cheese
5 Sprinkle over pasta and sauce and squeeze lemon.

Yummy stuff. And all veggies. The herbs and the flavorings make it look like the real thing with no fat!! Just another creative way to make veggies.

Mock Tuna Salad

There is nothing wrong with Tuna, however since I have taken a break from meat
preparing meat makes me sick.

Patience still eats fish and poultry. It doesn't hurt to add vegetarian meals also.

1 15 oz can of garbanzo beans
1/2 cup of low fat mayo
1/4 diced onion
1/4 cup celery
salt and pepper to taste

Mash beans with potato masher or place in food processor and process until beans are the consistency of coarse meal.

In medium bowl combine beans with the remaining ingredients. Serve as a sandwich filling. I got this recipe out of my Vegetarian Times cookbook.
